We cross check W-2s against pay stubs and tax returns (both of which we require as part of the application process). Another option is to require bank statements with which you can cross check deposits against W-2. We also attempt to verify salary when we call the employer to validate employment. Some employers are willing...some are not.

Something simple that has worked for me in the past is just giving their workplace a call to validate that information, it really helps.
